Vietnamese cuisine is known for its fresh flavors and is considered by many, the true light cuisine of Asia. Using fresh vegetables and herbs in delicate soups and stir-fries and beautifully seasoned grilled foods, noodles and rice, it is one of the most delightful cuisines, although not as known as Thai and many other Asian cuisines.
Their desserts are also based on fresh fruits, often served with tapioca or sweetened rice. As a former French colony, there is a French influence, but most of the food remains true to Vietnam.
